Porta de Serrans cocktail tent

I have spent one half of my second day in Valencia by walking around. I never use public transport. I like to walk. However after walking from my hotel to the beach and then from the beach all the way up to the Porta de Serrans through the city center (18.3 kms)  I really had to stop to have a break. Fortunatelly, close to Porta de Serrans, there were a few tents surrounded by tourists and I said to myself : ,,Well, even if i don’t like this touristic food and drinks, I may take something just to refresh my powers a little bit, before I will reach a bar named ‘‘Gong.‘‘ I came to these tents and one of them was a bar, where they were preparing a few cocktails. You could choose from Mojito, Pina Colada or Caipirinha and Caipiroska. Once You will fall in love with the combination of fresh mint and limes, there is no way back. I ordered Mojito and then all the magic happened.
The Barmaid took a plastic cup (we are on the street so I have no complaints about that), she added freshly cutted lime, added 3 coffee spoons of very dark sugar cane, picked off some mint leaves and then she ‘‘woke the mint up‘‘ (basically, You clap your hands while you have the mint leaves in one of your hands. That will damage the structure a bit and the mint starts to release more aroma), she measured a perfect amount of white rum and she finished that  with a soda water…
Now You may think that it looks like a pretty standard Mojito, huh? Well, if You consider, that we are on a street, and this tent doesn’t even have a name, it is pretty big success already. But my Mojito wasn’t ready yet, because…
Then she stirred it and at the end she added an exact 1 and ½ of a dash of ANGOSTURA BITTERS.
This is a perfect and absolutely amazing and genious detail. When You use Angostura for Mojito, it partially covers the sweet profile of the the taste, while it does not override any ingredients. You can still feel even the taste of sugar cane, it just wont be so sweet. But until You will try it for yourself, You will not believe it.

Her proper work together with this very rarely seen detail made it the second best Mojito I’ve ever had. And trust me, that was a lot of Mojitos in my life. By the way, do You wonder, which one is the best? Go to my review on Hippie Market on Ibiza… But for now lets enjoy this Mojito on the way to the bar Gong…
